Gluten Free Noodles With Alfredo Sauce

Well this week our family started our quest to be gluten free.  This came about after I read the book Wheat Belly.  Which I highly recommend everyone read.  I tossed out all gluten containing products in the house and started re-stocking with items such as almond flour, coconut flour and garbonzo bean flour.  But one thing that was missing was a good pasta and noodle replacement.  But with some research I discovered some products to try and use to fit that bill.  So below is a recipe using a product I heard about in my Gluten Free noodle quest.  It is using Tofu Shirataki Noodles.  I found it in the produce section by the other Tofu products.


 

I prepared the noodles as directed on the package and then mixed in 2 Tablespoons of Organic Cream Cheese and 1 Tablespoon of Parmesan cheese.  I used the grated kind from a can...but fresh would have been even better!  I then heated it over low heat until the cheese melted.  Salted and peppered it to taste.  It was delicious!  The amount of noodles you can eat in a serving is quite nice.  In fact you can eat the entire package!  Just toss in some cooked shrimp or chicken and some steamed broccoli and it is a complete gluten free meal!  It even passed the teenager test!  She is the major noodle freak in this house....so if she likes it you know it is good!   Thanks for reading!

  1. Shirataki Noodles are increasing in popularity as a wonderful additive to diet menus around the globe. These noodles are calorie and carb free.I just love to have this noodles.
