Buffalo Chicken Dip Made Over

This is a first time to make this dip for my family.  I have eaten it many times at other parties and events with my sorority sisters though.  It is always a big hit!

Buffalo Chicken Dip Made Over
  • 4 oz reduced fat cream cheese, softened
  • 1 cup fat free sour cream
  • 1/2 cup Franks hot sauce (or whatever hot sauce you like)
  • 1/2 cup crumbled blue cheese
  • 1 tsp white wine vinegar
  • 2 cups (14 oz  raw) cooked shredded chicken
Directions:

Mix the first 5 ingredients together until smooth. Add the chicken and put this in the crock pot on low for 3-4 hours. Serve warm. Makes 5 1/2 cups. 

Serve with celery for dipping.   Enjoy!!!!

Taco Layer Dip

Growing up my mom made this for parties every year.  As an adult I really only make it once a year and that is for the Super Bowl.  It is so yummy!  But since I try not to eat chips very often I limit the types of things one would dip chips into!  Well enough chit chat, here is the recipe.

Taco Layer Dip
 1 Can of Bean Dip
1 Can of Refried Beans
2 Cups Guacamole
2 T. Mayo
2 T. Sour Cream
1 Package Taco Seasoning Mix
Cheddar Cheese (Grated)
Monterey Jack Cheese (Grated)
Chopped Tomatoes
Sliced Black Olives
Chopped Green Onions

Mix bean dip and beans in a bowl.  Spread into a 9X13 pan. 

Combine guacamole, mayo, sour cream and taco seasoning in a bowl and mix well.  Spread over bean mixture.

Layer remaining ingredients over guacamole.

Serve with chips.

Now as I stated earlier this is a bit different than the traditional Texas 7 layer dip.  The main difference is that there would be a layer of sour cream, not just a few tablespoons mixed into some guacamole.  You certainly can spread a layer of sour cream onto it either on top of the beans or on top of the guacamole.  We try and make stuff as healthy as we can even when it is junk food.  We use organic ingredients whenever possible and of course stay away from anything containing trans fats and HFCS (high fructose corn syrup). If you follow those two rules you will eliminate a lot of stuff from your diet. 

Super Bowl Snacks

We love Super Bowl Sunday in our house.  We have our favorite teams of course but when it comes down to that day it does not matter who is playing...we have a party!!!  We buy team mylar balloons and lots of yummy food and sit around with the kids watching all the festivities...from the commercials to the game itself.  This year will be our first gluten free super bowl party.  We have cut out most chips and such from our normal pantry but for this one day we have allowed back in some tortilla chips to go along with our veggies and gluten free crackers to dip into all of the yummy dips.  Below are my favorite GF cracker that I have tried so far. Mary's Gone Crackers...I love the Herb variety as well as the Onion.  Check your local grocery store and see if you can find them there...our HEB has them in their tiny Gluten free section and our Kroger has them on the health food aisle.  They are also available thru Amazon...they have a ton of GF products in their grocery section.  

 

So for our big SB party we will be preparing my families Taco Layer dip (Texans love to call it 7 layer dip but ours is a bit different and since it originated in Oklahoma I will continue to call it by its original name) and a recipe I found on Pinterest, skinny Buffalo Chicken dip.  I will also be attempting to make my mothers Gouda cheese filled Crepes with almond flour to see if I can make them gluten free so that they will be allowed to party with us ( I LOVE these things so my fingers are tightly crossed that it works...and tastes at least close to the normal gluten filled goodies).  Also, on the menu for a first time attempt is a gluten free pizza.   I will be posting all of the recipes later today....just in the off chance you want to run right out and make them yourself!  Please feel free to share your favorite recipes...both healthy and not...I love to take normal recipes and healthy them up!!!!
